BATON ROUGE, La. (BRPRUD) — Vicious Biscuit, a fast-casual breakfast franchise, will open this fall at the corner of Highway 30 and Highway 44 in Gonzales.
An official news release says franchise owners Zach Trujillo and Chris Miller have signed a lease at Heritage Crossing at 333 St. Christopher Ave., Ste. A/B.
“The energy of the brand and the undeniable appeal of the food made an immediate impression on me. I thought if
Vicious Biscuit was not a franchise, it was meant to be,” Trujillo said.
The restaurant focuses on made-from-scratch biscuits filled with Southern-inspired ingredients. A signature item is The Vicious — a jalapeño cheddar biscuit with crispy fried chicken breast, signature maple sausage gravy, homemade cowboy candy and maple syrup.
The Salsa brand, founded by a former LSU baseball player, wife, is now sold in Ruse stores
Vicious Biscuit is also known for its Jam Bar with custom fruit jams and homemade jams
oils.
The restaurant also offers mimosas. Healthier breakfast options can be found on the menu, according to a news release.
“Baton Rouge and Southeast Louisiana as a whole are hungry for more quality breakfast and brunch options, and we knew Vicious Biscuit would be the perfect solution. In the South, biscuits aren’t just food; they are a way of life. And let me tell you, as a self-proclaimed biscuit connoisseur, you haven’t experienced a true biscuit until you’ve tried a Vicious Biscuit,” said Trujillo.
