
Food Safety Tips and Home Cooking Tools
Time and temperature are the most important factors to keep in mind when it comes to food safety.
Problem
The muted habanero peppers, an insect floating in a bottle of whiskey, a backup of the sewer and the frozen crab rank stored in garbage bags, were among the disorders that food safety inspectors cited in Topeka’s establishments last month.
The Kansas Act delegates the Kansas Ministry of Agriculture Ministry of Agriculture Regulation of Food establishments, food processing enterprises and accommodation establishments. Disorders – Particularly priority disorders directly related to the causes of food transmitted disease – can have different consequences, including the immediate closure of an establishment.
The Kansas Ministry of Agriculture shows that while most of the 41 general service establishments were inspected in January, or without violations, or no serious ones, several failed. Most inspections were routine, but inspectors also visited after complaints, licensing, follow -up and other reasons.
Nutrition and Compensation of Compensation in Topeka
The following nine establishments have been issued notifications of non -compliance with the Kansas Act after checks in January.
- Holiday Inn Express & Suites601 NW US-24 Highway.
Checking the complaint on January 24 at the accommodation established 22 violations.
The accommodation license was not publicly published for guests in the lobby. There was no emergency plan. There were no pets advice.
Carbon monoxide detectors have not been tested and no tests have been registered. A hearing detector that is broken smoke does not work. The emergency lights did not work.
Four rooms had a dirty bath solution. One room had a colored mattress pad and another had a colored blanket. Three rooms had colored mattresses. One room had a dirty microwave. Two rooms had secondary locks that didn’t work.
The gym had no disinfectant and no clean towels. Operational and disinfectant logs are not maintained daily.
Ice buckets are not disinfected. Numerous electrical outlets near water sources were not circuit breakers on the Earth’s chain. Multiple spray bottles had no label.
The closet area in the lobby had deodorant and medicine stored over snacks. The washer for a washing room had no paper towels. The washing room also had no disposable gloves.
The restaurant remained out of compliance after a check on February 7th.
- Holiday Inn Express & Suites601 NW US-24 Highway.
Apart from the above inspection of the accommodation, a routine inspection of the establishment on January 23 found seven violations.
The mini refrigerator did not keep cream cheese, boiled eggs and milk cold enough. The inspector writes: “The capacitor is frozen hard and does not allow the refrigerator to cool properly.”
The vessels that were washed were also not renovated. There were no test strips for disinfectant. The food thermometer did not work because it needed a battery.
The kitchen sink for washing by hand had a box of garbage bags in it. The sink also had no soap, nor did you have paper towels.
The restaurant was again in line after a subsequent check on February 4.
- Blind tiger brewery and restaurant417 37th St.
Checking the complaint on January 23 found 11 violations.
The establishment did not discontinue operations and notify the state authorities of the immediate danger to the health of the reserve copy of the sewer in the kitchen.
A chef who fry raw fish needed education on how to avoid crossing pollution.
A cooler had a box of molded peppers Khabanero. The cold preparation table had a container of sliced white molds. The tomato slice had old debris for food on it.
Potato mashed potatoes in a cooler had not cooled enough, which the inspector indicated because it was wrapped too tightly for the heat to escape and was too much of a portion.
The disinfectant disinfectant did not work properly. The handwashing sink in the vessel room had no soap and no paper towels. Two spray bottles under the sink were not labeled.
An open box with a cheesecake in a cooler had no date sign. No open container of half and half.
The restaurant was again in accordance after a subsequent inspection on February 4.
- T’Z whiskey barrel salon501 Ne Lyman Road.
The first operative inspection on January 23 after licensing found two violations.
A pack of hot dogs in the table of the cold brand and a package of beef sausages in a mini refrigerator were dated to January 10, which has passed the seven-day limit.
The kitchen needed a thin probe thermometer as the food thermometer they had was for large pieces of meat.
The restaurant was again in line after a subsequent check on February 4.
- A stop for traveling love1811 NW Brickyard Road.
The modified check of the complaint on January 22 found a violation.
The stopwashing sink was not enough hot water. The responsible person said he was waiting for a part to arrive and they used hot water from other distribution points while waiting for repairs. The sinks elsewhere in the building had hot water.
The restaurant was again in line after a subsequent check on February 4.
- Thunderbirds Grille2920 SE Croco.
The verification of the complaint on January 22 found eight violations.
A bottle of Jim Beam Kentucky Straight Bourbon had a winged insect floating in the bottle. The bar had more than 20 winged insects. The inspector writes that the responsible person says that “their harm company advises to pour hot boiling water over the sewer, but (the manager) is not sure whether it is done nightly. It is recommended to do it first in the morning. Provided education for the use of apple cider vinegar or sugar water to help too. “
Walking cooler had containers with coconut shrimp dough, open cream cheese and open guacamole, all without date markings. While the chopped ham had a date from January 13, it was held after the seven -day limit. The cooler also had pans with green beans, cheddar broccoli soup, chicken noodles soup and the question that did not cool enough, which the inspector pointed to was due to the arrangement of multiple deep pans.
The cooler for salad does not hold lettuce, colossus, maize salsa with black beans, hard boiled eggs, American slices of cheese and sliced tomatoes cold enough. The inspection revealed that the unit was excluded. Pizza ingredient cooler had black olives since December 3, which had passed the seven -day limit.
The inspector provided education for the requirements for partially prepared food after finding partially cooked chicken wings in a cooler.
The cooler had an open bag of feta cheese destroyed and delicacies salad, both without markings for date. A different cooler had a pot of chili with incorrect date marking.
There were no test strips for chlorine.
The restaurant was again in line after a subsequent check on February 4.
- China Pavilion5348 SW 17th St.
Checking the complaint on January 15 found 10 violations.
The freezer had containers with raw shrimp, imitation crabs, Wontons and other foods that were covered with ice particles. The inspector writes that “ice particles can compromise food when built on containers.”
In the refrigerator next to the Sushi Station there was raw chicken stored over ready to eat Kung Pao Chicken and General Tso Chicken Chicken. The inspector wrote that “you want to keep raw foods under all ready to eat foods to avoid crossing contamination.”
There were boards of cookies without protective coating, such as a sneeze security.
A sushi chef used a grocery bag to store fried sushi. The freezer had two large garbage bags filled with cancer ranging and numerous grocery bags. The inspector writes that the use of non -food bags “can allow pollution from these bags to affect food.”
The food thermometer was dirty. The canned pot was accumulated metal shavings on the blade.
The water in the washing machine of the dish was not hot enough to disinfect the dishes. The three sinks of the compartment also did not have enough hot water, so the temporary solution was to boil water on the stove to add to the sink. The hot water heater was not big enough.
The establishment returned in accordance after a subsequent check on January 29th.
- McDonald’sEast Topeka Service Area on I-70.
The routine check on January 15 found four violations.
The establishment did not discontinue operations and notify the state authorities of the immediate danger to the health of the reserve copy of the sewer in the kitchen.
Multiple floor channels had standing water. The sewer pulled away to the floor when the inspector operates water. The responsible person told the inspector that “this has lasted in the last few days and the above management is aware.” They also said they “use buckets to scrape the water” on the sinks and pour it into the sewer. The rear door was opened, where the inspector saw steam and water puddles with food particles in the snow.
There was no soap in the dispenser. A mini refrigerator had a Reddi Whip can.
The restaurant voluntarily closed.
The restaurant was again in accordance after a re -check on January 16th.
- The big cookie2815 SW Wanamaker Road.
A tracking check on January 13, which came after the routine check on December 30, found a violation.
The lady’s sink was not enough hot water.
The restaurant was again in line after another subsequent check on January 14th.
