I spent a Super Bowl on Sunday making royal cakes in this Baton Rouge bakery. Here’s how it went. – The defender

The bakery provided the dough, cherry, sprinkled and bingo for the class. First, the owner and the cockroach of the head, Madlin Schmidt Bur explained to us why she started King’s cake classes.

“It’s ridiculous that we all eat royal cakes every year, but none of us knows how to do them,” she said. “We have no secrets here.”

Each person received a single serving of pre -dough from the bakery, which had already made their first elevation. The first rise, according to Bur, gives the dough on the cake of the king enough air to have a fluffy consistency when baked.

Everyone in the class then rolled their dough in a rectangular shape and spread the cinnamon sugar mixture. The amount of filling in the King’s cake was left for everyone to decide – I personally love a sweet, caramelized cake with a king, so I almost doubled the amount of cinnamon sugar.

Then we all rolled out the dough of cinnamon-shaped diary to get this classic vortex model with cinnamon. Burly instructs the class to connect the edges of the logs to make a circle (or heart, or an oval-this is an adventure to choose in Eloise!).

Then Burr and her bakers lifted the King’s cakes and placed them on trays for a second proof or an rising period. This process expands the dough and gives it air (also known as even more fluffy after handling).

The royal cakes were placed on flour trays wrapped in a fitting film and then placed in a warming unit of 180 degrees for about 10 minutes. Bakers suggested that at home you placed the King cake in a warm, dry place until it doubles in size.

Enter bingo.

Our class played four bingo rounds as we waited for the royal cakes to rise, after which the cakes were transferred to the oven to bake (about 30 minutes in total).

We had the opportunity to talk to our table about their king cakes (whether they are rooted for the “eagles” or “Super Bowl bosses”) and play to win some awards with themed Mardi Grass.

Unfortunately for me and a friend of mine who is marked, we did not win a single bingo round. We didn’t even come to five in a row. As she waited between Bingo circles, Burr made a class with stories why she opened the bakery in 2021 and why she chose to name him after her sister Eloas.

“There was already La Madeleine,” she said. “And Eloaz was the next name in a family call.”

Bur is also talking about his latest endeavor: an independent bakery in the garden neighborhood.

The new building, which will include an outdoor space for socialization and a full classroom at the back, will be Eloise Market and Cakery’s new home in August. Bur is hoping to offer more baking classes and private events in space, as well as cakes and bakes to regular customers.

After bingo and baking, we all were given a white glaze and three colors for sprinkling (Purple, Gold and Green) to decorate our cakes for king.

This is when he had fun.

Everyone at the table had a different sense of decorations. Some sprinkled all three colors throughout the cake until a woman put the cherry on hers and just had gold orders. Another participant took this extra cherry and soaked the cake in glaze.

I chose a modest amount of cherry, with alternating sprinkled around the cake – and I hid the baby with a purple cake with a king.

The best part was that when we were done, we all have to enjoy a freshly baked, warm and purulent royal cake of our own creation.
