Bootleg Ramen returns to a new partnership with That Place in West End at 750 Summit St.

Chef Jaed Ave Fiore (former Josh Tusler) launched Bootleg Ramen with pop -up and then a delivery service in 2020, but stopped the business about two years ago.

Dave Hillman, owner of that Place (and Burke Street Pizza and Quiet Pint Tavern), said he wanted to add a shoulder to the menu of That Place for a while, as a natural addition to restaurant bowls.

Hilman said he had reached out and asked Fiore to help develop the menu. “For the first time, I thought about it two years ago – when there was no shoulder in many places,” Hilman said. “But if I would do it, I wanted to do it right.”

Bootleg Ramen was known for its broths from scratch and even handmade noodles – the latter is something that most shoulder stores don’t do.

“Even in Japan, only about 10% of Ramen places make their own noodles,” Fiore said. “But there is something in the handmade noodles, which is so good.”

Adding a shoulder to the menu, Hilman removed some other products, in particular beef sandwiches, including French dip and the Chicago-style Italian beef.

“We only sold four a day, so it really didn’t make sense,” he said.

It also reduced the number of chicken sandwiches and removed the long hot dogs-while keeping ordinary dogs on the menu.

All popular Poke dishes remain as well as the smokers. “Most of my business is a pow,” Hilman said.

He said that Place is still serving burgers, hot dogs, wings and chicken sandwiches partly because of their agreement with Joymongers Barrel Hall-where Joymongers customers can order directly from this place through QR codes in the barrel.

This place offers three arms ($ 13 to $ 17): traditional pork tonkosu, chicken (chicken and chicken broth and vegan tonkorts (creamy vegan broth based on oats with corn and soy beans). All include homemade shoulder noodles and broths made From scratch from Bootleg Ramen recipes.
