Less than a year after opening, Caesars Republic Scottsdale has announced several changes, including the intention to close one of its restaurants.

The hotel opened in early 2024 and featured three restaurants: Luna and Pronto by Giada De Laurentiis and Seven by Riot Hospitality Group, the group behind Cake, Dierks Bentley’s Whiskey Row, El Hefe, Farm & Craft, Hand Cut Chophouse and Riot House . Seven is a fine-dining restaurant with a pool lounge on the seventh floor, which also allows customers access to Caesar’s Sportsbook.

At the Business Journal’s Restaurant and Hospitality Summit, hotel CEO Rick Huffman announced his intention to convert Caesar to a Hilton-branded hotel and close Seven next May.

What will replace Seven in Scottsdale?

Huffman told the Phoenix Business Journal that the restaurant “fell short of the mark.” He said he plans to rework it into a new concept.

Caesars Republic Scottsdale did not immediately respond to The Arizona Republic’s request for more information about the new restaurant.
