Jordan Stewart, who previously worked at the Hotel du Vin in Birmingham, will take the helm as general manager.
This new independent will offer a superior culinary experience in a contemporary yet premium setting.

When is the new Cow & Sow steakhouse opening in Birmingham and what can I expect on the menu?
Cow & Sow, will fire up and elevate Birmingham’s steak game at One Chamberlain Square in Paradise when it opens its doors to the public on Monday 2 December.
At Cow & Sow, the star of the show is undoubtedly the steak. The menu will feature an array of premium aged steaks, from single cuts to exceptional grass-fed beef share steaks, along with delicious side dishes and small plates to start.
Enjoy specialty steaks from the steakhouse, including sirloin steaks, sirloin steaks, rib eye steaks and sirloin steaks – all aged 35 days. A must-have accompaniment is the signature crispy onion color with black garlic dip.
As the name suggests, there are plenty of tasty alternatives to steak, including the pulled pork burger and braised pork belly.
Vegans will love the Grilled Cauliflower Steak with Smoked Maple Glaze and Butternut Squash Wellington.
For those making it to dessert, there’s a carefully curated range of sweet delights, including the signature salted dark chocolate treat with tangerine tangerine gel for added freshness and tangerine crunch.
Other options include Salted Caramel Tart with Honeycomb and Vanilla Ice Cream, Affogato, Burnt Basque Cheesecake and Caramelized Pineapple.
Cow & Sow Malbec and cocktails
The extensive wine list includes Cow & Sow’s own Malbec – the perfect match to compliment the melt-in-your-mouth meat.
Those who prefer a cocktail will enjoy the selection of sophisticated concoctions such as the Sow Punch with Aluna coconut rum, pineapple, orange, cranberry and the Cow and Sour, a mix of amaretto, bourbon, lemon juice, syrup and cherry.
Why is Cow & Sow opening in Birmingham?
With two original sites in Bristol, founder Mark Warburton was determined to open his third restaurant in Birmingham and admits he jumped at the chance when he was offered the Paradise space. “It’s been my dream to expand outside of Bristol and I’ve had Birmingham in my sights for a long time.
“I am thrilled to be opening at Paradise and can’t wait to show what we have to offer the people of Birmingham. The city has a thriving dining scene, but I’m confident that Cow & Sow will prove we’re a step up.”
Raised above a country pub, Mark has lived and breathed hospitality since he was a child. His parents and grandparents ran pubs and his uncle has his own Bristol Brewery – hospitality is undoubtedly in the blood.
Another ground-breaking development is that the company is now a certified B Corp™, Mark says: “When I started Cow & Sow three years ago, I wanted to build a brand I could be proud of and lead the teams on an exciting and purposeful journey.
“For me, it had to be through a B Corp™. As a restaurant business, it would be difficult, but I knew we were doing great things for people and the planet. We have engaged with suppliers, ensuring the provenance and sustainability of our As a team, we collectively review our environmental impact and share ideas to reduce our carbon footprint in all areas and continually strive to be a force for good.
