When Aaron and Monica Cennon moved to the Wilmington area of ​​San Diego, they realized that they wanted to bring a truck for food to the east coast. However, it was not easy to get started.

“They were everywhere in California,” said Aaron Cannon. “But there was only a handful, four or five, here at that time.”

Aaron Cannon, who has worked as a cook for years, found a job at local restaurants before he and his wife started the A&M Red Food truck. In 2025, they celebrated 10 years in business.

“This is a long time when it comes to local trucks,” he said.

Sliders and taco

The basis of the A&M menu is simple.

“But it works because it can be very diverse and adaptive,” said Aaron Cannon.

The empty canvas of sliders, taco and thoth allows a lot of creativity. And, depending on the place and the event, they can customize the menu based on what the client wants or what he thinks will be the most popular-influential gluten-free and other options.

During the pandemic A&M (as many food trucks), it was found that local neighborhoods and communities would come out once or twice a month. This is a model that is still successful for them, in addition to places like Cape Fear Community College and various events.

Dishes to try

As for popular items, tacked shrimp and fish are winners.

“And the triple B,” he said.

It is a homemade mixture of ground beef and ground bacon. These patties are garnished with more bacon, cheddar cheese, lettuce, tomato and onions.

When they were in colleges, Aaron Cannon said the loaded total were a hit.

Support the local dishes

The cannons hope to continue with the food truck as long as they are able.

“This is a fun way to be part of the community,” said Aaron Cannon.

In fact, they are great believers in the support of the local grocery truck scene. Monica Cannon runs a Facebook group for local grocery truck operators.

“We all support ourselves,” said Aaron Cannon. “This is one thing I would ask for everyone. Try something of all food trucks there, even if it’s a small thing. See what everything is for. “
